Pecan Blueberry Encrusted Goat Cheese
What’s not to like in this appetizer? The sharpness of the goat cheese, covered in sweet blueberry jam and covered in toasted Pecans. Yummy!

- Terrapin Ridge Farms Blueberry Bourbon Pecan Jam
- Toasted Pecans, small chopped
- More Than Olives Arbequina Extra Virgin Olive Oil
- Crackers of Your Choice
To toast the pecans, begin by warming a skillet to medium heat. Add a light drizzle of More Than Olives Arbequina EVOO to the pan and add your pecan pieces. Stir the nuts until coated with the oil and continue to stir to toast the nuts. Watch them closely so you do not overcook the nuts, you just want them lightly browned to increase their lovely flavor. Remove from pan when done and let them cool before adding to the cheese roll.
Remove goat cheese from the packaging. Place it on a plate. Carefully spread the Terrapin Ridge Farms Blueberry Bourbon Pecan Jam around the goat cheese. Pack the toasted pecans onto the jam. Gently press the jam and pecans into the goat cheese, creating a coating.
Place in refrigerator for at least 2 hours before serving. Remove from the refrigerator and place on a serving tray along with your favorite crackers.
